Ingredients

  • 1 cup Spinach, chopped
  • 1/2 cup Bell pepper, diced
  • 1/4 cup Red onion, diced
  • 1/2 cup Cheddar cheese, shredded

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spray your muffin tin with cooking spray to prevent sticking.
  3. In a large bowl, whisk together the eggs and milk, then season with salt and pepper to taste.
  4. Stir in the chopped spinach, diced bell pepper, and red onion until well incorporated.
  5. Fold in the shredded cheddar cheese, ensuring an even distribution throughout the mixture.
  6. Fill each muffin cup about two-thirds full with the egg mixture.
  7. Bake in the preheated oven for 18-22 minutes, or until the muffins are set and golden on top.
  8. Allow the muffins to cool slightly before carefully removing them from the tray.

Notes

Don’t overfill the muffin tin. Feel free to substitute feta for cheddar for a tangy twist.
