Instructions
- Preheat your oven to 350°F (175°C).
- Spray your muffin tin with cooking spray to prevent sticking.
- In a large bowl, whisk together the eggs and milk, then season with salt and pepper to taste.
- Stir in the chopped spinach, diced bell pepper, and red onion until well incorporated.
- Fold in the shredded cheddar cheese, ensuring an even distribution throughout the mixture.
- Fill each muffin cup about two-thirds full with the egg mixture.
- Bake in the preheated oven for 18-22 minutes, or until the muffins are set and golden on top.
- Allow the muffins to cool slightly before carefully removing them from the tray.
Notes
Don’t overfill the muffin tin. Feel free to substitute feta for cheddar for a tangy twist.
