- 1 cup rolled oats
- 1 cup grated carrots
- 1/2 cup almond flour or oat flour
- 1/4 cup honey or maple syrup
- 1/4 cup unsweetened applesauce
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup raisins or walnuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine rolled oats, almond flour, baking powder, cinnamon, nutmeg, and salt.
- In another bowl, mix grated carrots, honey (or maple syrup), applesauce, and vanilla extract.
- Fold the wet mixture into the dry ingredients until combined. If using, fold in raisins or walnuts.
- Scoop tablespoon-sized portions onto the baking sheet, spacing them apart.
- Bake for 12-15 minutes until lightly golden.
- Allow to cool slightly before transferring to a wire rack.
