Ingredients

  • 1 cup rolled oats
  • 1 cup grated carrots
  • 1/2 cup almond flour or oat flour
  • 1/4 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/2 cup raisins or walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine rolled oats, almond flour, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix grated carrots, honey (or maple syrup), applesauce, and vanilla extract.
  4. Fold the wet mixture into the dry ingredients until combined. If using, fold in raisins or walnuts.
  5. Scoop tablespoon-sized portions onto the baking sheet, spacing them apart.
  6. Bake for 12-15 minutes until lightly golden.
  7. Allow to cool slightly before transferring to a wire rack.
