- 5 medium zucchinis
- Salt to taste
- 1 Tbsp olive oil or avocado oil
- 1/3 cup crumbled goat cheese
- 2 Tbsp chopped basil
- 1.5 Tbsp honey
- Pepper to taste
Instructions
- Remove the ends from the zucchinis and slice them into ½-inch pieces lengthwise.
- Sprinkle the zucchini slices with salt and let them sit for about 20 minutes to draw out moisture.
- Pat the zucchini slices dry with a clean cloth or paper towel.
- Brush both sides of each zucchini slice with olive oil or avocado oil.
- Grill the zucchini slices over medium-high heat for 10-15 minutes, flipping halfway through, until tender and grill marks appear.
- Transfer grilled zucchini to a platter and top with crumbled goat cheese, chopped basil, honey, and season with salt and pepper to taste.
- Enjoy warm.
Notes
For a complete meal, consider adding grilled chicken, chickpeas, or lentils. Serve alongside garlic bread or a mixed greens salad.
