A delightful summer dish featuring grilled zucchini topped with creamy goat cheese, fresh basil, and a drizzle of honey.

Ingredients

  • 5 medium zucchinis
  • Salt to taste
  • 1 Tbsp olive oil or avocado oil
  • 1/3 cup crumbled goat cheese
  • 2 Tbsp chopped basil
  • 1.5 Tbsp honey
  • Pepper to taste

Instructions

  1. Remove the ends from the zucchinis and slice them into ½-inch pieces lengthwise.
  2. Sprinkle the zucchini slices with salt and let them sit for about 20 minutes to draw out moisture.
  3. Pat the zucchini slices dry with a clean cloth or paper towel.
  4. Brush both sides of each zucchini slice with olive oil or avocado oil.
  5. Grill the zucchini slices over medium-high heat for 10-15 minutes, flipping halfway through, until tender and grill marks appear.
  6. Transfer grilled zucchini to a platter and top with crumbled goat cheese, chopped basil, honey, and season with salt and pepper to taste.
  7. Enjoy warm.

Notes

For a complete meal, consider adding grilled chicken, chickpeas, or lentils. Serve alongside garlic bread or a mixed greens salad.
