- 2 large peaches, halved and pitted
- 1 cup fresh blueberries
- 4 cups mixed greens
- 1/4 cup feta cheese, crumbled
- 1/4 cup walnuts, chopped
- 1/4 cup balsamic vinaigrette
- Salt and pepper to taste
Instructions
- Preheat your grill to medium heat. Brush the cut side of the peach halves lightly with oil.
- Place the peaches cut-side down on the grill and cook for about 3-4 minutes until grill marks appear and the flesh is slightly tender.
- Slice the grilled peaches into wedges and add them to a large serving bowl. Combine with mixed greens, blueberries, feta cheese, and chopped walnuts.
- Drizzle the balsamic vinaigrette over the salad and toss gently to combine. Season with salt and pepper to taste before serving.
Notes
Brush peaches lightly with oil for perfect grilling. For a creamier texture, substitute feta with goat cheese.
