This green bean casserole offers a hearty and memorable touch to your family gatherings, bursting with flavors from fresh vegetables and creamy goodness.

  • Total Time: 40 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 1 pound fresh green beans, trimmed
  • 1 cup sliced mushrooms
  • 1 small chopped onion
  • 2 cloves minced garlic
  • 1 cup heavy cream
  • 1 cup vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon soy sauce
  • Salt & pepper to taste
  • 1 cup French fried onions (for topping)

Instructions

  1. Blanch the green beans in boiling water for about five minutes until they’re bright green and slightly tender. Drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Sauté chopped onions and minced garlic until fragrant. Add sliced mushrooms and cook until soft and browned, about five minutes.
  3. Stir in heavy cream, vegetable broth, and soy sauce. Simmer until the mixture thickens. Fold in blanched green beans and season with salt and pepper. Transfer to a baking dish and top with French fried onions.
  4. Bake until the topping is golden and crispy, about 20 minutes.

Notes

For a healthier version, consider substituting heavy cream with cashew cream or coconut cream. Adding herbs like thyme or rosemary can enhance the flavor.
