- 1 pound fresh green beans, trimmed
- 1 cup sliced mushrooms
- 1 small chopped onion
- 2 cloves minced garlic
- 1 cup heavy cream
- 1 cup vegetable broth
- 1 tablespoon olive oil

- Salt & pepper to taste
- 1 cup French fried onions (for topping)
Instructions
- Blanch the green beans in boiling water for about five minutes until they’re bright green and slightly tender. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Sauté chopped onions and minced garlic until fragrant. Add sliced mushrooms and cook until soft and browned, about five minutes.
- Stir in heavy cream, vegetable broth, and soy sauce. Simmer until the mixture thickens. Fold in blanched green beans and season with salt and pepper. Transfer to a baking dish and top with French fried onions.
- Bake until the topping is golden and crispy, about 20 minutes.
Notes
For a healthier version, consider substituting heavy cream with cashew cream or coconut cream. Adding herbs like thyme or rosemary can enhance the flavor.
