Instructions
- Grate the zucchini and place the shredded pieces in a clean towel to squeeze out excess moisture.
- Combine the grated zucchini, Parmesan cheese, fresh dill, sliced green onions, flour, eggs, salt, and pepper in a mixing bowl. Mix well until everything is evenly incorporated.
- Heat oil in a skillet over medium heat until shimmering.
- Scoop spoonfuls of the mixture into the hot oil, flatten them slightly with the spatula, and cook until golden brown and crispy, about 3-4 minutes on each side.
- Remove the fritters and drain on paper towels. Serve warm for the best flavor and texture.
Notes
Squeeze out excess moisture from the zucchini to avoid soggy fritters. You can substitute feta cheese for Parmesan for a tangy twist.
