Ingredients

  • 2 pounds Potatoes
  • 1/2 cup Cherry tomatoes, halved
  • 1/4 cup Red onion, finely chopped
  • 1/2 Cucumber, diced
  • 1/4 cup Olives, pitted and sliced
  • 1/4 cup Feta cheese, crumbled
  • 3 tablespoons Olive oil
  • 2 tablespoons Red wine vinegar
  • 1 teaspoon Dried oregano
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Boil the potatoes in salted water until tender, about 15 to 20 minutes. Drain and let them cool.
  2. Once cooled, cut the potatoes into bite-sized pieces.
  3. In a large bowl, combine the potatoes, cherry tomatoes, red onion, cucumber, olives, and feta cheese.
  4. In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
