A simple yet delicious Greek dish featuring fresh green beans, potatoes, and tomatoes, flavored with olive oil and a touch of citrus.

Ingredients

  • 1 medium onion, finely diced
  • 1 pound green beans, trimmed
  • 1 medium tomato, diced
  • 1 pound baby potatoes, halved
  • Salt to taste
  • Pepper to taste
  • 3 tablespoons water
  • Lemon juice (optional, for serving)
  • Parsley (optional, for garnish)

Instructions

  1. Gather and prepare all ingredients; wash and trim green beans, halve baby potatoes, and dice the onion and tomato.
  2. In a large pan, heat olive oil over medium heat and sauté diced onion for 3 to 4 minutes until translucent.
  3. Add halved baby potatoes, stir to coat, and sauté for an additional 5 minutes.
  4. Add trimmed green beans and cook for about 5 minutes until they begin to soften.
  5. Stir in diced tomato, season with salt and pepper, add water, cover, and steam for 15 to 20 minutes, stirring occasionally.
  6. Taste and adjust seasoning as necessary, and drizzle fresh lemon juice before serving. Garnish with chopped parsley if desired.

Notes

Serve right away for best flavor. Great addition to soak up juices with crusty bread.
