Instructions
- Begin by grating the cucumber with a box grater or a food processor. After grating, squeeze it gently to remove any excess water.
- In a mixing bowl, add the fresh yogurt and whisk until it becomes smooth and creamy.
- Next, incorporate the grated cucumber along with the chopped fresh mint leaves into the yogurt. Mix thoroughly to combine all the flavors.
- Add the fresh lemon juice, salt to taste, and ground cumin powder if desired. Stir until all the ingredients are well blended and adjust the seasoning as necessary.
- Chill the raita in the refrigerator for at least 30 minutes to enhance the flavors. When ready to serve, give it a good stir to re-combine any separated ingredients.
