Ingredients

  • 1 tsp baking soda
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1/2 cup molasses
  • 1 cup hot water

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your loaf pan.
  2. In a large bowl, whisk together flour, baking soda, ground ginger, ground cinnamon, ground nutmeg, and salt.
  3. In another bowl, cream the softened butter and brown sugar until fluffy.
  4. Add in the eggs, one at a time, mixing well between additions, then stir in molasses.
  5. Gradually mix in the dry ingredients to the wet ingredients, alternating with hot water until a smooth batter forms.
  6. Pour the batter into the prepared loaf pan, and bake for 60-70 minutes, or until a toothpick inserted comes out clean.
  7. Allow to cool for 10-15 minutes before transferring onto a wire rack to cool completely.

Notes

For variations, consider adding chopped nuts or chocolate chips for extra texture. Let the loaf cool completely before slicing for the best results.
