- 1/4 cup Additional Brown Sugar (for streusel)
- 1/3 – 1/2 cup Flour (for streusel)
- 1/2 tsp Cinnamon (for streusel)
- A pinch of Salt (for streusel)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, blend the softened butter, vegetable oil, and brown sugar until smooth and fluffy.
- Add an egg and the vanilla extract, mixing thoroughly. Gradually incorporate the dry ingredients until just combined.
- In a separate bowl, prepare the streusel by mixing softened butter, brown sugar, flour, cinnamon, and a pinch of salt.
- Use a large cookie scoop to form dough balls on a lined baking sheet, creating an indent on top of each ball and sprinkle with the streusel mixture.
- Bake the cookies for 10-12 minutes, until golden and slightly domed. Let cool for about 5 minutes on the baking sheet before transferring to a wire rack.
- While baking, whip up the icing by combining powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cookies.
