- 2 cups chopped fresh rhubarb
- 2 cups sliced fresh strawberries
- 1 cup granulated sugar
- 2 tablespoons cornstarch
- 1 cup heavy cream
- 1 teaspoon vanilla extract
- 8 oz softened cream cheese
- 1 prepared graham cracker crust
Instructions
- Combine the rhubarb, strawberries, granulated sugar, and cornstarch in a medium saucepan. Cook over medium heat until the mixture thickens, about 10 minutes. Remove from heat and let cool.
- Beat the heavy cream and vanilla extract in a large mixing bowl using an electric mixer until soft peaks form.
- Mix the softened cream cheese in another bowl, then gradually fold in the whipped cream mixture until well combined.
- Layer the cooled fruit mixture and cream mixture in the graham cracker crust, repeating until all ingredients are used, finishing with a cream layer on top.
Notes
Make sure to allow the fruit mixture to cool completely before layering. Additionally, allow enough chilling time for best results.
