Ingredients

  • 2 cups chopped fresh rhubarb
  • 2 cups sliced fresh strawberries
  • 1 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 8 oz softened cream cheese
  • 1 prepared graham cracker crust

Instructions

  1. Combine the rhubarb, strawberries, granulated sugar, and cornstarch in a medium saucepan. Cook over medium heat until the mixture thickens, about 10 minutes. Remove from heat and let cool.
  2. Beat the heavy cream and vanilla extract in a large mixing bowl using an electric mixer until soft peaks form.
  3. Mix the softened cream cheese in another bowl, then gradually fold in the whipped cream mixture until well combined.
  4. Layer the cooled fruit mixture and cream mixture in the graham cracker crust, repeating until all ingredients are used, finishing with a cream layer on top.

Notes

Make sure to allow the fruit mixture to cool completely before layering. Additionally, allow enough chilling time for best results.
