Delicious gluten-free cookies featuring rich peanut butter and topped with chocolate kisses.

Ingredients

  • 1 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1 pinch of salt
  • Hershey’s Kisses (for topping)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare baking sheet with parchment paper.
  2. In a large bowl, combine peanut butter, granulated sugar, brown sugar, egg, vanilla, baking soda, and salt until well mixed.
  3. Shape tablespoon-sized amounts of dough into balls and roll in granulated sugar.
  4. Place the sugared balls on the prepared baking sheet, spaced out.
  5. Bake for 10-11 minutes until cracks form and cookies turn golden.
  6. Press a Hershey’s Kiss into the center of each cookie while warm.
  7. Let cool on the baking sheet for a few minutes before transferring to a cooling rack.

Notes

These cookies can also be made with Reese’s Miniature Peanut Butter Cups instead of Hershey’s Kisses for a delicious twist.
