A light and airy angel food cake with a molten chocolate lava center, finished with powdered sugar and optional fresh fruit.

1 cup all-purpose flour

1 cup granulated sugar

7 egg whites

1 teaspoon cream of tartar

1/2 teaspoon vanilla extract

1/2 cup heavy cream

1/2 cup chocolate chips

Powdered sugar for dusting

Fresh fruits (optional)

Instructions

  1. Preheat and prep: Preheat oven to 350°F (175°C). Use an ungreased angel food cake pan.
  2. Make the lava center: Heat heavy cream until hot. Remove from heat, add chocolate chips, rest 1 minute, then stir until smooth. Freeze 15–20 minutes until thick.
  3. Whip egg whites: Whip egg whites with cream of tartar and vanilla to soft peaks. Gradually add sugar and whip to stiff peaks.
  4. Fold in flour: Gently fold flour into the egg whites in batches.
  5. Assemble: Add half batter to pan, spoon chocolate center into the middle, cover with remaining batter.
  6. Bake and cool: Bake 35–40 minutes. Cool upside down.
  7. Serve: Dust with powdered sugar and serve with fresh fruit if desired.

Notes

Chilling the chocolate mixture is essential to keep the lava centered. Always cool angel food cake upside down to maintain structure.
