Delicious and healthy veggie patties made with vibrant vegetables, perfect for any meal.

Ingredients

  • 1 cup steamed broccoli (finely chopped)
  • 1 cup grated carrot
  • 1 cup mashed potatoes (Russet recommended)
  • 1/4 cup chopped onions
  • 2-3 tbsp chickpea flour or all-purpose flour
  • 1 clove minced garlic
  • Salt & pepper to taste
  • Olive oil (for frying)

Instructions

  1. In a large mixing bowl, combine the steamed broccoli, grated carrot, mashed potatoes, chopped onions, chickpea or all-purpose flour, minced garlic, and season with salt and pepper. Mix well until everything holds together.
  2. Shape the mix into small patties, roughly 2 to 3 inches wide.
  3. Heat a skillet over medium heat and lightly grease it with olive oil. Cook each patty for about 3 to 4 minutes per side or until golden brown and crispy.

Notes

Serve warm with a side of ranch dressing or salsa. Optional variations include adding spices or swapping out ingredients for dietary preferences.
