- 1 cup steamed broccoli (finely chopped)
- 1 cup grated carrot
- 1 cup mashed potatoes (Russet recommended)
- 1/4 cup chopped onions
- 2-3 tbsp chickpea flour or all-purpose flour
- 1 clove minced garlic
- Salt & pepper to taste
- Olive oil (for frying)
Instructions
- In a large mixing bowl, combine the steamed broccoli, grated carrot, mashed potatoes, chopped onions, chickpea or all-purpose flour, minced garlic, and season with salt and pepper. Mix well until everything holds together.
- Shape the mix into small patties, roughly 2 to 3 inches wide.
- Heat a skillet over medium heat and lightly grease it with olive oil. Cook each patty for about 3 to 4 minutes per side or until golden brown and crispy.
Notes
Serve warm with a side of ranch dressing or salsa. Optional variations include adding spices or swapping out ingredients for dietary preferences.
