This refreshing salsa combines tart rhubarb with sweet fruit, zesty lime, and a hint of spice for a bright, crunchy dip that’s perfect with chips or as a topping.

  • Total Time: 15 minutes
  • Yield: 4 servings 1x

Ingredients

Scale
  • 2 cups rhubarb, diced small
  • 1 cup strawberries or mango, diced
  • 1 small red onion, diced
  • 1 jalapeno, seeds removed and diced
  • 1/4 cup cilantro, chopped (optional)
  • 2 tablespoons lime juice
  • 1 tablespoon honey or sweetener of choice
  • 1/2 teaspoon salt

Instructions

  1. Dice the rhubarb and fruit into small pieces.
  2. Dice the onion and jalapeno, adjusting the amount of jalapeno for desired heat.
  3. Toss everything in a bowl with lime juice, sweetener, and salt.
  4. Taste and adjust sweetness or acidity as needed.
  5. Let the salsa sit for 10 minutes before serving to allow flavors to meld.

Notes

Chill for at least 30 minutes for best flavor. Can be made ahead and stored in the fridge for up to 3 days.
