Instructions
- Whisk together balsamic vinegar, olive oil, minced garlic, dried oregano, salt, and pepper in a mixing bowl until well combined.
- Add the chopped vegetables to the marinade, ensuring they are well coated, and let them sit for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated vegetables onto the skewers, alternating types for a colorful effect.
- Grill the kebabs for about 10-12 minutes, turning occasionally until the vegetables are tender and have a nice char.
- Serve the kebabs warm, straight off the grill.
Notes
For a richer flavor, marinate the vegetables for longer. Soak wooden skewers in water for 30 minutes before using them on the grill to prevent burning.
