Ingredients

  • 1 cup Unsalted butter (softened)
  • 2/3 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Almond extract (optional)
  • 2 cups All-purpose flour
  • 1/4 teaspoon Salt
  • 1/2 cup Jam or jelly (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and sugar until light and fluffy.
  3. Stir in the vanilla and almond extracts. Gradually add the flour and salt, mixing until just combined.
  4. Roll the dough into small balls and place them on the baking sheet. Press your thumb into the center of each ball to create an indentation.
  5. Fill each indentation with a dollop of your favorite jam.
  6. Bake for about 12-15 minutes or until the edges turn lightly golden.
  7. Allow cookies to cool briefly on the sheet before transferring to a wire rack to cool completely.

Notes

These cookies can be made gluten-free by using a gluten-free flour blend. Store in an airtight container for up to a week.
