Ingredients

  • 1 head Cabbage, chopped
  • 2 Carrots, sliced
  • 1 Onion, diced
  • 3 cloves Garlic, minced
  • 4 cups Vegetable broth
  • 1 can Diced tomatoes
  • 1 tablespoon Olive oil
  • Salt and pepper, to taste
  • Fresh herbs, for garnish (optional)

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and minced garlic, sautéing until the onions are translucent (about 3-5 minutes).
  3. Stir in the sliced carrots and cook for another 5 minutes to enhance flavors.
  4. Add the chopped cabbage and sauté for another 5 minutes until softened.
  5. Pour in the vegetable broth and add the canned diced tomatoes. Bring it to a boil, then reduce heat, cover, and let it simmer for 20 minutes.
  6. Season with salt and pepper to taste. Garnish with fresh herbs if desired. Serve hot.

Notes

Feel free to add other vegetables, spices, or plant-based proteins like lentils or chickpeas for variation.
