- 1 head Cabbage, chopped
- 2 Carrots, sliced
- 1 Onion, diced
- 3 cloves Garlic, minced
- 4 cups Vegetable broth
- 1 can Diced tomatoes
- 1 tablespoon Olive oil
- Salt and pepper, to taste
- Fresh herbs, for garnish (optional)
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and minced garlic, sautéing until the onions are translucent (about 3-5 minutes).
- Stir in the sliced carrots and cook for another 5 minutes to enhance flavors.
- Add the chopped cabbage and sauté for another 5 minutes until softened.
- Pour in the vegetable broth and add the canned diced tomatoes. Bring it to a boil, then reduce heat, cover, and let it simmer for 20 minutes.
- Season with salt and pepper to taste. Garnish with fresh herbs if desired. Serve hot.

Feel free to add other vegetables, spices, or plant-based proteins like lentils or chickpeas for variation.
