- 2 cups fresh broccoli florets
- 1 large Honeycrisp apple, diced
- 1/2 cup red onion, finely chopped
- 1/2 cup sunflower seeds
- 1/4 cup dried cranberries
- 1/2 cup Greek yogurt or mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- In a large bowl, combine broccoli florets, diced Honeycrisp apple, chopped red onion, sunflower seeds, and dried cranberries.
- In a separate bowl, whisk together Greek yogurt (or mayonnaise), apple cider vinegar, honey, salt, and pepper.
- Pour the dressing over the salad mixture and toss to coat. Chill in the fridge for 30 minutes before serving.
Notes
This salad is perfect for meal prep and can be stored in the fridge for up to three days. For added protein, consider adding chicken or tofu.
