Instructions
- Prepare the Sweet Potatoes: Peel and boil sweet potatoes until tender (15-20 minutes), then mash until smooth and let cool.
- Mix the Dough: In a bowl, combine warm water, yeast, and sugar; let sit for 5 minutes. Add mashed sweet potatoes, melted butter, and egg; mix in flours and salt.
- Kneading and Rising: Knead dough on a floured surface for 8-10 minutes until smooth. Place in a greased bowl, cover, and let rise until doubled (about 1 hour).
- Shaping and Baking: Punch down dough, shape into rolls, place in a greased baking dish, and let rise for another 30 minutes. Preheat oven to 375°F (190°C) and bake for 15-20 minutes until golden brown.
