- 1 cup Plain Yogurt
- 1 cup Granulated Sugar
- 3 Large Eggs
- 1/2 cup Vegetable Oil
- 1 1/2 cups All-Purpose Flour
- 2 teaspoons Baking Powder
- 2 tablespoons Lemon Zest
- 1/4 cup Lemon Juice
- 1/2 teaspoon Salt
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan and set it aside.
- In a large mixing bowl, whisk together the yogurt and sugar until combined.
- Add eggs one at a time, beating well after each addition. Mix in the vegetable oil, lemon zest, and juice.
- In a separate bowl, whisk together flour, baking powder, and salt. Gradually add to the wet mixture until just combined.
- Pour the batter into the prepared loaf pan and smooth the top. Bake for about 45 minutes or until a toothpick comes out clean.
- Allow the cake to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
For added flavor, consider experimenting with lime or orange zest and juice.
