- 2 Medium Eggplants
- 1 cup Marinara Sauce
- 2 cups Shredded Mozzarella Cheese
- 1/2 cup Grated Parmesan Cheese
- 1 teaspoon Dried Oregano
- 1 teaspoon Garlic Powder

- Fresh Basil for garnish
Instructions
- Preheat your oven to 375°F (190°C). Slice the eggplants into 1/2-inch thick rounds. Sprinkle salt on both sides and let sit for 20 minutes to draw out moisture.
- Rinse the eggplant slices under cold water and pat dry with paper towels.
- Line a baking sheet with parchment paper and arrange the eggplant slices. Spread marinara sauce on each slice, followed by mozzarella and parmesan cheese. Sprinkle with oregano, garlic powder, salt, and pepper.
- Bake for 25-30 minutes, or until the cheese is bubbly and golden. Garnish with fresh basil before serving.
