Ingredients

  • 2 Medium Eggplants
  • 1 cup Marinara Sauce
  • 2 cups Shredded Mozzarella Cheese
  • 1/2 cup Grated Parmesan Cheese
  • 1 teaspoon Dried Oregano
  • 1 teaspoon Garlic Powder
  • Salt and Pepper to taste
  • Fresh Basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C). Slice the eggplants into 1/2-inch thick rounds. Sprinkle salt on both sides and let sit for 20 minutes to draw out moisture.
  2. Rinse the eggplant slices under cold water and pat dry with paper towels.
  3. Line a baking sheet with parchment paper and arrange the eggplant slices. Spread marinara sauce on each slice, followed by mozzarella and parmesan cheese. Sprinkle with oregano, garlic powder, salt, and pepper.
  4. Bake for 25-30 minutes, or until the cheese is bubbly and golden. Garnish with fresh basil before serving.
