  • 1 cup Buttermilk
  • ½ cup Vegetable oil
  • 2 tsp Vanilla extract
  • 1 cup Hot water
  • 16 oz Cream cheese, softened
  • ½ cup Granulated sugar (cheesecake)
  • 2 Large eggs (cheesecake)
  • ½ tsp Peppermint extract
  • ¼ cup Sour cream
  • 1 cup Semi-sweet chocolate chips
  • ½ cup Heavy cream
  • Crushed mint chocolates (optional)
  • Fresh mint leaves (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and generously grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, whisk together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt until blended. In a separate bowl, mix granulated sugar, eggs, buttermilk, vegetable oil, and vanilla extract until smooth. Gradually fold the dry ingredients into the wet ingredients until they are just combined. Stir the hot water into the batter for a silky texture.
  3. Divide the batter evenly between the two prepared pans and bake for about 30-35 minutes or until a toothpick inserted comes out clean. Let the cakes cool completely on a wire rack.
  4. For the mint cheesecake, beat softened cream cheese and sugar until smooth, followed by adding in the eggs, peppermint extract, and sour cream until well blended. Pour the mixture into a greased 9-inch springform pan and bake at 325°F (160°C) for about 50-60 minutes, or until the center is set but still slightly jiggly. Let it cool completely before serving.
