  • Total Time: 50 minutes
  • Yield: 8 servings 1x

Ingredients

Scale
  • 1 cup chopped dates
  • 1 cup chopped walnuts
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1/2 cup fresh orange juice
  • 1 tablespoon orange zest
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C) and grease a cake pan.
  2. Cream together butter and sugar until light and fluffy (3-5 minutes).
  3. Add eggs one at a time, mixing well after each addition. Stir in orange juice and zest.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet mixture, stirring until just combined.
  5. Fold in chopped dates and walnuts.
  6. Pour batter into the prepared pan and bake for 30-35 minutes, or until a toothpick comes out clean.
  7. Let cool for 10 minutes, then transfer to a wire rack. Prepare glaze by mixing powdered sugar with orange juice and drizzle over the cooled cake.

Notes

For a richer flavor, consider adding a pinch of cinnamon or nutmeg to the batter.
