Ingredients

  • 2 medium zucchini (about 2 cups), grated
  • ½ cup grated cheese (Cheddar, Parmesan, or Mozzarella)
  • 2 large eggs

  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder (optional)
  • ¼ cup milk (60 ml)
  • Vegetable oil or butter for frying

Instructions

  1. Grate the zucchini using a coarse grater and squeeze out excess moisture.
  2. In a large mixing bowl, combine the grated zucchini, cheese, eggs, flour, salt, pepper, garlic powder, and milk. Stir until smooth.
  3. Heat a skillet over medium heat and add oil or butter.
  4. Scoop about 2 tablespoons of batter for each pancake, flatten, and cook for 2-3 minutes on each side until golden brown.
  5. Transfer to a paper towel-lined plate and serve hot with sour cream or your favorite dipping sauce.
