- 2 medium zucchini (about 2 cups), grated

- 2 large eggs
- ½ cup all-purpose flour (65 g)

- ¼ teaspoon garlic powder (optional)
- ¼ cup milk (60 ml)
- Vegetable oil or butter for frying
Instructions
- Grate the zucchini using a coarse grater and squeeze out excess moisture.
- In a large mixing bowl, combine the grated zucchini, cheese, eggs, flour, salt, pepper, garlic powder, and milk. Stir until smooth.
- Heat a skillet over medium heat and add oil or butter.
- Scoop about 2 tablespoons of batter for each pancake, flatten, and cook for 2-3 minutes on each side until golden brown.
- Transfer to a paper towel-lined plate and serve hot with sour cream or your favorite dipping sauce.
