Ingredients

  • 2 large flour tortillas (810 inch)
  • 1/3 cup tomato sauce or pizza sauce
  • 3/4 cup shredded mozzarella cheese
  • 1/4 cup sliced black olives
  • 1/4 cup sliced cherry tomatoes
  • 1/4 small sliced red onion
  • 1/4 cup baby spinach leaves
  • 1/2 teaspoon dried oregano
  • 1 tablespoon extra virgin olive oil
  • Pinch of red pepper flakes
  • Fresh basil leaves (for garnish)

Instructions

  1. Preheat your oven to 425°F and place a baking sheet inside to heat up.
  2. Lightly brush both sides of the tortillas with extra virgin olive oil and spread tomato sauce on each, leaving a 1/2-inch border.
  3. Sprinkle shredded mozzarella cheese over the sauce.
  4. Add sliced olives, tomatoes, red onion, and baby spinach on top, followed by oregano and red pepper flakes.
  5. Transfer pizzas on parchment paper to the preheated baking sheet and bake for 8-10 minutes until golden and bubbly.
  6. Let cool for one minute, garnish with fresh basil, slice into wedges, and serve.
