Ingredients

  • 1 pound Carrots
  • 2 tablespoons Olive Oil
  • 3 cloves Garlic, minced
  • ½ teaspoon Salt
  • ½ teaspoon Pepper
  • 1 tablespoon Butter, melted
  • Fresh herbs, Optional, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the carrots. For larger ones, cut them in half for even cooking.
  3. Boil the carrots in salted water for about 10 minutes until tender. Drain and cool slightly.
  4. Smash each carrot gently on a baking sheet.
  5. Drizzle with olive oil and melted butter, then sprinkle with garlic, salt, and pepper.
  6. Roast in the preheated oven for 20-25 minutes until golden brown and crispy.
