- 1/4 cup blueberries
- 2 eggs

- 1/4 tsp vanilla extract
- Sweetener to taste
- Butter or oil for frying
Instructions
- Combine almond flour, cream cheese, eggs, baking powder, vanilla extract, and sweetener in a bowl. Mix thoroughly until you achieve a smooth batter.
- Fold in the blueberries gently, taking care not to crush them.
- Heat a pan over medium heat and add a touch of butter or oil to prevent sticking.
- Pour a small amount of the batter into the hot pan. Cook until it turns golden brown on one side.
- Flip the roll-up and cook the other side until it’s also golden brown.
- Remove from the pan and roll while still warm to hold its shape.
Notes
For best results, cook until golden for perfect crispness. Store in an airtight container in the fridge for up to 2 days.
