- 1 bunch radishes, sliced 1/8-inch thick
- 1 lemon, juice and zest
- 1 tbsp olive oil
- 1/4 cup freshly grated Parmesan (plus extra for topping)
- 2 tbsp torn fresh dill
- Salt and black pepper to taste
Instructions
- Slice the radishes thinly and evenly, about 1/8 inch thick.
- Place sliced radishes in a mixing bowl, squeeze half the lemon juice over them, sprinkle with salt, and massage gently for 1-2 minutes.
- Add olive oil, grated Parmesan, and torn dill. Toss gently until well combined.
- Transfer to serving plates and top with lemon zest, additional Parmesan, dill, and cracked black pepper. Serve immediately.
Notes
Massage the radishes before serving to enhance flavor. For variations, consider adding nuts or swapping Parmesan for feta.
