- 1 can White Beans, drained and rinsed
- 1 cup Cherry Tomatoes, halved
- 2 cups Vegetable Broth
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 2 cups Greens (spinach or kale)

- Salt and pepper to taste
- 1 tbsp Olive Oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion and sauté until translucent, about 5 minutes.
- Stir in minced garlic and cook for another minute.
- Add cherry tomatoes and cook until they start to soften.
- Pour in vegetable broth and bring to a simmer.
- Add white beans, greens, oregano, salt, and pepper.
- Simmer for 10-15 minutes, allowing the flavors to meld together.
- Serve hot.
Notes
Customize the stew by adding diced carrots, celery, or bell peppers. For a spicy kick, consider adding a pinch of red pepper flakes.
