Instructions
- In a medium bowl, combine the chia seeds and coconut milk. Stir well to ensure that the chia seeds are evenly distributed.
- Allow the mixture to sit for 10-15 minutes, mixing occasionally to prevent clumping.
- After 15 minutes, stir in the maple syrup and vanilla extract. Adjust sweetness to preference.
- Pour into serving jars or bowls and refrigerate for at least one hour before serving to allow flavors to meld.
Notes
This pudding can be topped with fresh fruits and stored in airtight containers for up to four days in the fridge.
