Ingredients

  • 12 ounces pasta (of choice)
  • 2 large onions
  • 2 tablespoons olive oil
  • 1 cup heavy cream or coconut cream
  • 1 cup grated Parmesan cheese or nutritional yeast
  • 1 tablespoon chili oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook the pasta in a large pot of boiling salted water until al dente.
  2. In a skillet, heat olive oil and add sliced onions with a pinch of salt. Cook until caramelized, about 15-20 minutes.
  3. Reduce heat, add heavy cream (or coconut cream), and simmer. Stir in Parmesan (or nutritional yeast) and chili oil; season with salt and pepper.
  4. Toss the drained pasta with the sauce, adding reserved pasta water if needed for consistency.
  5. Garnish with fresh parsley and serve warm.

Notes

For a vegan version, replace heavy cream with coconut cream and Parmesan with nutritional yeast.
