- 12 ounces pasta (of choice)
- 2 large onions
- 2 tablespoons olive oil
- 1 cup heavy cream or coconut cream
- 1 cup grated Parmesan cheese or nutritional yeast
- 1 tablespoon chili oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta in a large pot of boiling salted water until al dente.
- In a skillet, heat olive oil and add sliced onions with a pinch of salt. Cook until caramelized, about 15-20 minutes.
- Reduce heat, add heavy cream (or coconut cream), and simmer. Stir in Parmesan (or nutritional yeast) and chili oil; season with salt and pepper.
- Toss the drained pasta with the sauce, adding reserved pasta water if needed for consistency.
- Garnish with fresh parsley and serve warm.
Notes
For a vegan version, replace heavy cream with coconut cream and Parmesan with nutritional yeast.
