  • 1 teaspoon ground cinnamon
  • ¾ cup dried cranberries
  • ½-¾ cup raisins
  • ½ cup chopped walnuts

Instructions

  1. Activate the yeast by warming the water and dissolving honey, then add yeast and let bloom for 5-10 minutes.
  2. Combine the bread flour, kosher salt, and ground cinnamon in a mixing bowl.
  3. Add the wet yeast mixture to the dry ingredients and mix until combined, then fold in the dried fruits and walnuts.
  4. Cover and let rise at room temperature for 8-10 hours.
  5. Shape the dough, cover, and chill in the fridge overnight.
  6. Preheat the Dutch oven and bake the bread at 450°F (232°C) covered for 30 minutes, then uncovered for an additional 15-20 minutes until golden brown.
  7. Cool on a rack before slicing.
