- 1½ cups room-temperature water
- 2-3 tablespoons honey
- 1 teaspoon active dry yeast
- 3 cups bread flour or all-purpose flour
- 1 teaspoon kosher salt
- 1 teaspoon ground cinnamon
- ¾ cup dried cranberries
- ½-¾ cup raisins
- ½ cup chopped walnuts
Instructions
- Activate the yeast by warming the water and dissolving honey, then add yeast and let bloom for 5-10 minutes.
- Combine the bread flour, kosher salt, and ground cinnamon in a mixing bowl.
- Add the wet yeast mixture to the dry ingredients and mix until combined, then fold in the dried fruits and walnuts.
- Cover and let rise at room temperature for 8-10 hours.
- Shape the dough, cover, and chill in the fridge overnight.
- Preheat the Dutch oven and bake the bread at 450°F (232°C) covered for 30 minutes, then uncovered for an additional 15-20 minutes until golden brown.
- Cool on a rack before slicing.
