Instructions
- Preheat your oven to 350°F (175°C).
- Grease a 9×5 inch loaf pan.
- In a bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the orange juice, vegetable oil, egg, and orange zest.
- Gently combine the wet and dry ingredients until just mixed.
- Fold in the cranberries and walnuts or pecans if using.
- Pour the batter into the prepared loaf pan and bake for 50-60 minutes, or until a toothpick comes out clean.
- Let cool before slicing and enjoying.
