Instructions
- In a medium bowl, combine the couscous with boiling water. Cover and let it sit for 5 minutes to absorb the water.
- Fluff the couscous with a fork, then add diced cucumber, bell pepper, halved cherry tomatoes, finely chopped red onion, and parsley. Toss gently to mix.
- In a small bowl, whisk together olive oil and lemon juice, then pour over the salad and mix well. Season with salt and pepper to taste.
- For optimal flavor, chill in the refrigerator for about 30 minutes before serving.
