- 2 tablespoons psyllium husk powder
- 1 teaspoon baking powder
- 1/4 teaspoon sea salt

Instructions
- Preheat oven: Set to 350°F (175°C) and line a baking sheet with parchment.
- Blend ingredients: Blend cottage cheese, eggs, psyllium husk powder, baking powder, and salt until smooth.
- Let batter sit: Allow the mixture to rest for 5 minutes to thicken.
- Shape flatbreads: Spoon batter onto baking sheet, shaping into flat rounds (about 1/4 inch thick).
- Bake: Bake for 35 minutes until golden brown and set.
- Cool and serve: Let cool before serving. Use for wraps, sandwiches, or pizzas.
Notes
- Store in an airtight container in the refrigerator for up to 5 days.
- Reheat in a toaster oven at 300°F for 5–7 minutes. Avoid microwave.
