A healthy and delicious snack or dessert made with cottage cheese and grated carrots, perfect for the whole family.

Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • ½ cup almond flour (or oat flour)
  • ½ cup grated carrot
  • 23 tbsp maple syrup or honey (optional)
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • ¼ tsp cinnamon
  • Pinch of salt
  • 23 tbsp chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line an 8×8-inch baking dish with parchment paper or lightly grease it.
  3. In a bowl, whisk together the cottage cheese, eggs, maple syrup (if using), and vanilla extract until smooth.
  4. Add the almond or oat flour, baking powder, cinnamon, salt, and grated carrot, stirring until combined.
  5. Pour the batter into the prepared dish and smooth the top.
  6. Bake for 25-30 minutes until the surface is set and a toothpick comes out mostly clean.
  7. Let the bars cool for at least 10 minutes before slicing into squares.

Notes

You can substitute other ingredients based on your dietary preferences, such as using flax eggs for a vegan option.
