- 1 cup cottage cheese
- 2 large eggs
- ½ cup almond flour (or oat flour)
- ½ cup grated carrot
- 2–3 tbsp maple syrup or honey (optional)
- 1 tsp vanilla extract
- ½ tsp baking powder
- ¼ tsp cinnamon
- Pinch of salt
- 2–3 tbsp chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Line an 8×8-inch baking dish with parchment paper or lightly grease it.
- In a bowl, whisk together the cottage cheese, eggs, maple syrup (if using), and vanilla extract until smooth.
- Add the almond or oat flour, baking powder, cinnamon, salt, and grated carrot, stirring until combined.
- Pour the batter into the prepared dish and smooth the top.
- Bake for 25-30 minutes until the surface is set and a toothpick comes out mostly clean.
- Let the bars cool for at least 10 minutes before slicing into squares.
Notes
You can substitute other ingredients based on your dietary preferences, such as using flax eggs for a vegan option.
