- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1 cup granulated sugar
- 16 oz cream cheese, softened
- 1 cup sour cream
- 1/2 cup brewed coffee, cooled
- 3 large eggs
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs with melted butter and press the mixture into the bottom of a 9-inch springform pan.
- In a large bowl, beat the softened cream cheese and granulated sugar until smooth. Add sour cream, cooled brewed coffee, eggs, and vanilla extract; mix until fully combined.
- Pour the cheesecake batter over the prepared crust and bake for 55 to 60 minutes until the center is set. Allow it to cool completely, then refrigerate for at least 4 hours or overnight to set.
Notes
This recipe can be adapted for gluten-free by using gluten-free graham crackers or almond flour. Consider adding espresso powder for a stronger coffee flavor.
