Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1/2 cup brewed coffee, cooled
  • 3 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 325°F (163°C). In a medium bowl, combine graham cracker crumbs with melted butter and press the mixture into the bottom of a 9-inch springform pan.
  2. In a large bowl, beat the softened cream cheese and granulated sugar until smooth. Add sour cream, cooled brewed coffee, eggs, and vanilla extract; mix until fully combined.
  3. Pour the cheesecake batter over the prepared crust and bake for 55 to 60 minutes until the center is set. Allow it to cool completely, then refrigerate for at least 4 hours or overnight to set.

Notes

This recipe can be adapted for gluten-free by using gluten-free graham crackers or almond flour. Consider adding espresso powder for a stronger coffee flavor.
