Cinnamon Apple Cottage Cheese Bites

A delightful blend of flavors combining cottage cheese and oats, perfect for breakfast or a quick snack.

Ingredients

  • 1 cup Cottage Cheese
  • 1 cup Rolled Oats
  • 1/2 cup Applesauce or 1 small Grated Apple
  • 1 Large Egg
  • 1/2 tsp Cinnamon
  • 1 tbsp Honey or Maple Syrup (optional)
  • 1/2 tsp Baking Powder
  • A pinch of Salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your mini muffin pan by greasing it or lining it with mini muffin liners.
  2. In a mixing bowl, combine cottage cheese, rolled oats, applesauce or grated apple, large egg, cinnamon, honey or maple syrup, baking powder, and salt. Mix until well incorporated.
  3. Allow the batter to rest for 5 minutes.
  4. Scoop the mixture into the mini muffin pan, filling each cup almost to the top.
  5. Bake for 18 to 20 minutes until set and lightly golden on top.
  6. Let cool for a few minutes and then transfer to a wire rack to cool completely.

Notes

These bites can be enjoyed warm or cold and stored in the fridge for up to four days.
