- 1 cup Cottage Cheese
- 1 cup Rolled Oats
- 1/2 cup Applesauce or 1 small Grated Apple
- 1 Large Egg
- 1/2 tsp Cinnamon
- 1 tbsp Honey or Maple Syrup (optional)
- 1/2 tsp Baking Powder
- A pinch of Salt
Instructions
- Preheat your oven to 350°F (175°C) and prepare your mini muffin pan by greasing it or lining it with mini muffin liners.
- In a mixing bowl, combine cottage cheese, rolled oats, applesauce or grated apple, large egg, cinnamon, honey or maple syrup, baking powder, and salt. Mix until well incorporated.
- Allow the batter to rest for 5 minutes.
- Scoop the mixture into the mini muffin pan, filling each cup almost to the top.
- Bake for 18 to 20 minutes until set and lightly golden on top.
- Let cool for a few minutes and then transfer to a wire rack to cool completely.
Notes
These bites can be enjoyed warm or cold and stored in the fridge for up to four days.
