Ingredients

  • 2 lbs Russet potatoes
  • 4 tbsp Butter
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1 cup Shredded cheddar cheese (divided)
  • 2 Large eggs
  • 1/2 cup All-purpose flour
  • Optional: roasted garlic, chives, smoked paprika to taste

Instructions

  1. Peel and cube the russet potatoes, place them in a large pot, cover with salted water, and boil for about 15 minutes until fork-tender.
  2. Drain the potatoes, return them to the pot, and mash with butter, salt, black pepper, and half of the cheddar cheese until creamy.
  3. Allow the mixture to cool slightly, then stir in the eggs and flour until fully combined.
  4. Preheat your oven to 400°F (200°C). Form small balls from the mixture, place them on a parchment-lined baking sheet, and top with the remaining cheddar cheese.
  5. Bake for 20-25 minutes until golden brown.
