- 2 lbs Russet potatoes
- 4 tbsp Butter
- 1 tsp Salt
- 1/2 tsp Black pepper
- 1 cup Shredded cheddar cheese (divided)
- 2 Large eggs
- 1/2 cup All-purpose flour
- Optional: roasted garlic, chives, smoked paprika to taste
Instructions
- Peel and cube the russet potatoes, place them in a large pot, cover with salted water, and boil for about 15 minutes until fork-tender.
- Drain the potatoes, return them to the pot, and mash with butter, salt, black pepper, and half of the cheddar cheese until creamy.
- Allow the mixture to cool slightly, then stir in the eggs and flour until fully combined.
- Preheat your oven to 400°F (200°C). Form small balls from the mixture, place them on a parchment-lined baking sheet, and top with the remaining cheddar cheese.
- Bake for 20-25 minutes until golden brown.
