Instructions
- Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper.
- Heat olive oil in a skillet over medium heat. Add sliced onions with a pinch of salt. Cook slowly, stirring occasionally, until golden brown (about 15 minutes).
- Roll out the puff pastry on a floured surface and cut into squares.
- Once onions are caramelized, mix in chopped thyme. Assemble the tarts by placing a dollop of the onion mixture on each pastry piece, then topping with crumbled goat cheese.
- Transfer to the prepared baking sheet and bake for 15 minutes or until golden brown. Let cool slightly before serving.
