- 1 sheet Puff Pastry
- 2 large Onions, thinly sliced
- 1 tablespoon Olive Oil
- Salt and Pepper to taste
- 4 ounces Goat Cheese, softened
- 1 tablespoon Fresh Thyme Leaves
- 1 Egg, beaten (for egg wash)
Instructions
- Preheat oven to 400°F (200°C).
- Heat olive oil in a pan over medium heat. Add sliced onions, season with salt and pepper, and caramelize for 20-25 minutes.
- Roll out the puff pastry on a floured surface and cut into squares, about 3 inches each side.
- Place pastry squares on a baking sheet lined with parchment paper.
- Top each pastry square with caramelized onions and crumbled goat cheese, then sprinkle with fresh thyme leaves.
- Brush edges of each pastry square with the beaten egg.
- Bake for 15-20 minutes until the pastry is puffed and golden.
Notes
Consider adding sautéed mushrooms or spinach for a variation. These tarts pair well with a light salad or creamy tomato soup.
