Ingredients

  • 1 sheet Puff Pastry
  • 2 large Onions, thinly sliced
  • 1 tablespoon Olive Oil
  • Salt and Pepper to taste
  • 4 ounces Goat Cheese, softened
  • 1 tablespoon Fresh Thyme Leaves
  • 1 Egg, beaten (for egg wash)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Heat olive oil in a pan over medium heat. Add sliced onions, season with salt and pepper, and caramelize for 20-25 minutes.
  3. Roll out the puff pastry on a floured surface and cut into squares, about 3 inches each side.
  4. Place pastry squares on a baking sheet lined with parchment paper.
  5. Top each pastry square with caramelized onions and crumbled goat cheese, then sprinkle with fresh thyme leaves.
  6. Brush edges of each pastry square with the beaten egg.
  7. Bake for 15-20 minutes until the pastry is puffed and golden.
