Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- Cream together the softened unsalted butter and granulated sugar until light and fluffy.
- Beat in the egg and vanilla extract until fully combined.
- In another bowl, whisk together flour, baking powder, and salt, and then gradually mix into the butter mixture.
- Roll the dough into 1-inch balls and space them on the baking sheet.
- Bake for 10-12 minutes until golden brown around the edges.
- Prepare the filling by mixing ricotta cheese with powdered sugar until smooth.
- Once cookies are cool, fill them with the ricotta mixture and sprinkle mini chocolate chips on top.
