Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and 1/2 cup of powdered sugar until light and fluffy.
  3. Add in the vanilla extract and mix until just combined.
  4. In a separate bowl, whisk together the all-purpose flour and salt. Gradually add the dry mixture to the butter mixture, stirring until just combined.
  5. Fold in the finely chopped pecans.
  6. Form small balls of dough, about 1 inch in diameter, and place them on the prepared baking sheet, spacing them 1 inch apart.
  7. Bake for 12-15 minutes or until the bottoms are lightly golden.
  8. Allow the cookies to cool for 5 minutes, then roll them in extra powdered sugar before cooling completely on a wire rack.
  9. If desired, roll them in powdered sugar again before serving.
