- 1 cup unsalted butter, softened
- 1/2 cup powdered sugar, plus extra for rolling
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 cup finely chopped pecans
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together the softened butter and 1/2 cup of powdered sugar until light and fluffy.
- Add in the vanilla extract and mix until just combined.
- In a separate bowl, whisk together the all-purpose flour and salt. Gradually add the dry mixture to the butter mixture, stirring until just combined.
- Fold in the finely chopped pecans.
- Form small balls of dough, about 1 inch in diameter, and place them on the prepared baking sheet, spacing them 1 inch apart.
- Bake for 12-15 minutes or until the bottoms are lightly golden.
- Allow the cookies to cool for 5 minutes, then roll them in extra powdered sugar before cooling completely on a wire rack.
- If desired, roll them in powdered sugar again before serving.
Notes
For a gluten-free version, substitute all-purpose flour with a gluten-free blend.
