- 1 head Cauliflower, cut into florets
- 1 cup Buffalo sauce
- 1 tablespoon Olive oil
- Salt and pepper, to taste
- 4 large Tortillas
- Lettuce or mixed greens, as desired
- Diced tomatoes, as desired
- Sliced avocado (optional), as desired
- Blue cheese or ranch dressing (optional), as desired
Instructions
- Preheat your oven to 425°F (220°C).
- In a large bowl, toss the cauliflower florets with olive oil, salt, and pepper.
- Spread the coated cauliflower on a baking sheet and bake for 20-25 minutes until tender and crispy.
- Once done, remove the cauliflower from the oven, and in the same bowl, toss it gently in buffalo sauce.
- Warm the tortillas in a pan or microwave.
- Layer your wraps with fresh lettuce or mixed greens, the buffalo cauliflower, and any additional toppings.
- If desired, drizzle with blue cheese or ranch dressing.
- Wrap tightly and enjoy immediately.
Notes
For a vegan version, ensure the buffalo sauce is plant-based and use a dairy-free dressing. You can also customize the wraps with other vegetables for added texture and flavor.
