Ingredients

  • 4 large Tortillas
  • Lettuce or mixed greens, as desired
  • Diced tomatoes, as desired
  • Sliced avocado (optional), as desired
  • Blue cheese or ranch dressing (optional), as desired

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, toss the cauliflower florets with olive oil, salt, and pepper.
  3. Spread the coated cauliflower on a baking sheet and bake for 20-25 minutes until tender and crispy.
  4. Once done, remove the cauliflower from the oven, and in the same bowl, toss it gently in buffalo sauce.
  5. Warm the tortillas in a pan or microwave.
  6. Layer your wraps with fresh lettuce or mixed greens, the buffalo cauliflower, and any additional toppings.
  7. If desired, drizzle with blue cheese or ranch dressing.
  8. Wrap tightly and enjoy immediately.
