Ingredients

  • 2 cups All-Purpose Flour
  • 1/2 cup Brown Sugar, packed
  • 1/2 cup Granulated Sugar
  • 1/2 cup Unsalted Butter, softened
  • 1 Large Egg
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/4 cup Milk
  • 1 cup Powdered Sugar (for icing)
  • 2-3 tablespoons Milk (for icing)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, brown sugar, and granulated sugar until smooth and creamy (about 2-3 minutes).
  3. Beat in the egg and vanilla extract until well combined.
  4. In another bowl, whisk together the flour, salt, and cinnamon. Gradually add to the wet ingredients, stirring until a dough forms.
  5. Roll out the dough to 1/4 inch thick and cut into rectangles.
  6. Spoon the brown sugar mixture onto half of the rectangles and cover with the other halves. Press down to seal.
  7. Bake for 15-20 minutes or until golden brown.
  8. Let cool and mix powdered sugar with milk to create icing. Drizzle icing over cooled cookies.

Notes

For dairy-free, substitute butter with coconut oil and milk with almond milk. You can add fruit preserves to the filling for added flavor.
