- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 cup vegetable or chicken broth
- 1 cup milk or cream
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, sauté until softened, about 3-5 minutes.
- Add broccoli florets and broth to the pot. Bring to a boil, then reduce heat and simmer until broccoli is tender, around 10 minutes.
- Blend the soup until smooth using an immersion blender or a traditional blender (be cautious with hot liquids).
- Stir in milk or cream and shredded cheddar cheese until melted. Season with salt and pepper to taste. Serve warm with crusty bread.
Notes
Add crushed red pepper flakes for spice or try different cheese variations like gouda or pepper jack.
