Ingredients
Scale
- 1 cup All-Purpose Flour
- 1/2 cup Granulated Sugar
- 1 tsp Baking Powder
- 1/2 tsp Baking Soda
- 1/4 tsp Salt
- 1/2 cup Buttermilk
- 1/4 cup Melted Butter
- 1 Large Egg
- 1 tsp Vanilla Extract
- 1 cup Fresh Blueberries
- 1 cup Powdered Sugar (for glazing)
- 2-3 tbsp Milk (for glazing)
Instructions
- Preheat the oven to 350°F (175°C) and grease a mini donut pan with non-stick spray.
- In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
- In another bowl, mix the buttermilk, melted butter, egg, and vanilla extract until smooth.
- Gently fold the wet ingredients into the dry ingredients, being careful not to overmix.
- Fold in the blueberries, ensuring they are evenly distributed without breaking apart.
- Spoon the batter into the mini donut pan, filling each cavity about two-thirds full.
- Bake for 10 to 12 minutes or until a toothpick comes out clean when inserted into the center of a donut.
- Allow the donuts to cool slightly for 5 minutes before carefully removing them from the pan.
- For glazing, mix powdered sugar with milk until desired consistency is achieved and drizzle over cooled donuts.
Notes
For a gluten-free option, use a gluten-free all-purpose flour blend. For added flavor, consider incorporating lemon zest or substituting some blueberries with raspberries.
