- 3 pounds peeled and chopped potatoes (russet or Yukon Gold)
- 3 garlic cloves
- 1/2 cup unsalted butter (1 stick)
- 1 cup whole milk
- 1 1/2 teaspoons sea salt (plus more for water)
- Freshly ground black pepper, to taste
- 1/4 to 1/2 cup sour cream (optional)
- Chopped fresh chives (for garnish), to taste
Instructions
- Place potato chunks and garlic cloves in a large pot, cover with cold water, and add salt. Bring to a boil, then reduce heat and gently boil for 15 to 20 minutes until fork tender.
- Drain potatoes and return them to the pot. Mash with a potato masher and mix in butter, milk, salt, and pepper until smooth and creamy.
- If using sour cream, fold it in and adjust seasoning. Serve topped with butter and fresh chives.
Notes
Start with cold water when boiling to ensure even cooking. Don’t forget to salt the water for best flavor.
